Tasty Tofu Stirfry


The trick to a good tofu stirfry is the right oil.  I used coconut oil today and put in an old zucchini, some stale kale and some past the expiration date tofu.  It all smelled and tasted great, so I am not concerned about the expiration date.  I am the only one eating it so if it was bad it would only be my problem.  I hate wasting food.  I dredged the tofu in almond flour salt and wheat flour after letting the tofu water come out.  With tofu you have to wrap it in paper towels and get the extra moisture out otherwise you get a gray mush for you dinner.  I have a delightful new stove and it was a lot of fun using it this noon time!  I also tossed  in some sunflower seeds, and afterwards realized hot sauce would have gone well with it.
